The plate’s special slope directs oils to the general collector, then to the internal fat collector, reducing odors and excessive smoke, especially when cooking greasy items like bacon, duck magret, and sausages. It’s also ideal for delicate or larger items like scrambled eggs, fish, and vegetables, typically cooked on a griddle but now possible in a charcoal oven.
Lateral arms allow the plate to be positioned inclined for greasy foods or horizontal for smaller, non-greasy items, preventing them from slipping. Its independent movement system lets you recharge the oven without removing the plate, ensuring efficient service.
