The special slope of the plate channels oils to the general collector and then to the internal fat collector of all Pira charcoal ovens. This design helps reduce odors and excessive smoke when cooking fatty foods like bacon, duck magret, and sausages. It is also perfect for cooking delicate items such as scrambled eggs, fish, and vegetables—foods typically reserved for griddles but now possible in a charcoal oven.
