Apr\u00e8s avoir pass\u00e9 l&rsquo;\u00e9t\u00e9 \u00e0 faire frire du poisson dans un restaurant de la c\u00f4te malagu\u00e8ne, il a d\u00e9cid\u00e9 de quitter l&rsquo;\u00e9cole de droit de Madrid pour s&rsquo;inscrire \u00e0 La C\u00f3nsula, l&rsquo;\u00e9cole h\u00f4teli\u00e8re de Malaga.\n<a href=\"https:\/\/www.juntadeandalucia.es\/organismos\/empleoformacionytrabajoautonomo\/sae\/areas\/mejora-empleabilidad\/fpe\/paginas\/escuela-hosteleria-malaga.html\">La C\u00f3nsula<\/a> a ouvert son esprit et lui a montr\u00e9 un monde tr\u00e8s diff\u00e9rent de la gastronomie, lui permettant de participer \u00e0 diff\u00e9rents \u00e9v\u00e9nements et concours. Apr\u00e8s sa visite \u00e0 la ferme piscicole, il a continu\u00e9 \u00e0 \u00e9tudier le produit \u00e0 base de caviar et apr\u00e8s l&rsquo;avoir pr\u00e9sent\u00e9 \u00e0 Riofr\u00edo, ils ont d\u00e9cid\u00e9 de collaborer et d<strong>&lsquo;ouvrir un atelier de recherche sp\u00e9cialis\u00e9 dans l&rsquo;esturgeon et le caviar<\/strong>.\nMalgr\u00e9 son exp\u00e9rience en tant que chef, Diego manquait d&rsquo;exp\u00e9rience en tant qu&rsquo;entrepreneur. Cela vient de la main du groupe Alea, dirigeant une entreprise de produits finis \u00e0 Malaga. Le nom ne trompe pas. <strong>Sollo est comme l&rsquo;esturgeon a \u00e9t\u00e9 nomm\u00e9 dans les temps anciens<\/strong>.
